This is one of my absolute favorite salads. It is summery, refreshing, and perfectly balanced.. with the help of the out of this world dressing. Seriously, this dressing is everything good you want in a salad. You may think the ingredients are weird but they come along so well.
To start with you need a base of greens. Rocket or baby spinach are the best choice. Lettuce is not recommended, when I tried it I felt the combination was off. Another good option is purslane if you can find it.
There is not much to this salad, it is so easy to make and no cooking required.
Ingredients:
- 3 cups rocket / baby spinach
- 1 mango (ripe but not soft)
- 4-6 strawberries
- 4-6 mushrooms
- 10 cherry tomatoes
- 1/2 red onion
- 15 mini mozzarella balls/feta/halloumi
- 1/4 cup almond slices
- 1 teaspoon chia seeds
- 3 tablespoons balsamic vinegar
- 3 tablespoons pomegranate molasses
- 1 teaspoon Dijon mustard
- 2-3 tablespoons olive oil
- Pinch of salt
- Black pepper
*Make sure all your greens and vegetables are washed and dried.
*Slice the mango, strawberries, cherry tomatoes, mushrooms and red onions.
*Assemble the salad, lay everything you sliced on a bed of the rocket or spinach. You can choose to keep the leaves of the greens whole or give them a rough chop to make them easier to eat. As you wish.
*Top your salad with the mini mozzarella balls. I used these just because they look cute but you can use regular mozzarella, or feta or Halloumi. You can even grill the Halloumi if you like, grilled Halloumi is delicious in salads.
*Give your sliced almonds a quick toast in a hot pan just for a couple of minutes, this enhances their crunch and flavor.
*Make the dressing by adding everything to a sealed jar and shake until all the ingredients are well combined. If you're using a whisk you might need to whisk a little until the mustard and olive oil emulsify. Pour the dressing on the salad just before serving, sprinkle the chia seeds and toasted almonds and dig in.
