Pancakes are my kids favorite breakfast, we make them so frequently that I had to look for a healthier option. I tried a few recipes and this was my favorite. It is so easy to make and turns out so good you can't tell it is healthy, without butter, flour or sugar!
For this you need ripe bananas, the riper the better (if riper is even a word :). You know these overly ripe bananas with plenty of brown spots you have on your counter ready to get rid of? Well these are exactly what we need. Just make sure they haven't gone bad.
We will also need rolled oats, I haven't tried it with instant oats but my guess is it will work just fine.
You can add a spoonful of peanut butter for some creaminess and a tablespoon of chia seeds for extra nutritional value. But today I kept it simple and basic .. and you can add on whatever you like.

Ingredients:

  • 1 1/2 cups rolled oats
  • 2 medium size ripe bananas
  • 1/2 cup milk of choice
  • 2 eggs 
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • A pinch of salt
  • 1 teaspoon cinnamon
  • 2 tablespoons chocolate chips
  • Strawberries for topping

*Pour all your ingredients into a stick blender. Start with the wet ones, it will make the blender easier to run. Dry ingredients at the bottom of the blender will give you a hard time getting it to start mixing.
*Blend them until they are nice and smooth. That's it.. the batter is ready! How easy was that??
*Now you need to get your pan hot before you start pouring. Not piping hot that you burn the batter as soon as it hits the pan, but hot enough for it not to stick. This is where you can add a nob of butter, it is totally optional but will add flavor and will help the pancake flip without sticking to the pan. Of course if you are on a diet and can do without the extra calories, feel free to remove the butter altogether. Just make sure NOT to pour the batter on a warm pan, it will stick.
*Once the pancake starts forming tiny bubbles, sprinkle some chocolate chips. Now check the bottom, if it has formed a crust, you can flip the pancake. Stack the pancakes and drizzle them with maple syrup or honey, garnish with strawberries and dig in. Delicious!
