Forget any French Toast recipe you know and just try this. It is amazing. Not eggy and not soggy, instead creamy and rich on the inside with a crispy exterior. Today I am making Pumpkin Bread French Toast, using my Pumpkin Bread recipe I shared earlier and is available on my website (use link for recipe). It is so moist and full of flavor. But this French toast recipe can be made with any bread you like, regular toast, brioche, banana bread whatever you like or have on hand. Just replace the pumpkin spice mix with cinnamon.
Ingredients:
- Pumpkin Bread (or your choice of bread)
- 3 whole eggs
- 2 egg yolks
- 1-2 teaspoon vanilla
- 1 cup whole milk
- 1/2 cup cream
- 1 teaspoon pumpkin spice (or cinnamon)
- 2 tablespoons brown sugar
- Pinch of salt
- Butter for frying
- Maple syrup and cream (optional)
*In a bowl, whisk the eggs, egg yolks, sugar and vanilla well until slightly fluffy.
*Pour in the milk, cream, spice and salt and whisk again. The mix is ready.
*Cut your pumpkin bread (or any bread) into thick slices, this way it will hold itself and not get soggy.
*Melt a nob of butter in a non-stick pan.
*Dip each slice into the milk and egg mixture on both sides, drain really well and place it on the melted butter in the pan. You want medium heat to get that crispy exterior, but not too hot to burn it.
*Once it's nice and golden, flip on the other side and then flip on all sides to get the perfect crust.
*Serve it warm with some cream, or ice cream, or fruit, or just a drizzle of maple syrup .. it is delicious! Creamy and rich on the inside and crunchy and crisp on the outside. Enjoy!
