Sweet potato is in season and although it is very starchy, it is super soft when cooked. And because of that, and the fact that it is so sweet and delicious, sweet potatoes make for the best super moist Sweet Potato Cake.
You can either boil the potatoes or roast them in the oven. I prefer roasting, this way they get to keep all their flavor and nutrients. But boiling is fine if you feel it is easier for you.
Ingredients:
- 2 cups cooked sweet potato- 2 كوب بطاطا حلوه مسلوقه او مشويه بالفرن
- 4 eggs - 4 بيض
- 1 cups sugar -1 كوب سكر
- 1/2-1 cup brown sugar - نص كوب او كوب سكر بني
- 1 1/4 cup vegetable oil - كوب وربع كوب زيت نباتي
- Vanilla - فانيلا
- 2 cups flour - 2 كوب طحين
- 1 teaspoon baking powder - 1 ملعقه صغيره باكينغ باودر
- 2 teaspoon baking soda - 1 ملعقه صغيره بيكربونات الصودا
- Pinch of salt - رشة ملح
- 1 teaspoon pumpkin spice - 1 ملعقه صغيره بهارات اليقطين
*You need a food processor for this or a blender if you don't have one.
*In your blender drop the cooked sweet potato, the eggs, the oil, sugar and vanilla and blend them until completely smooth. Wet ingredients done.
*Now sift together the dry ingredients, flour, salt, baking powder and soda, and pumpkin spice.
*In a bowl gradually mix the dry ingredients with the wet, use a spatula for this and do not over mix.
*Bake in a 180* oven for 30-40 minutes or until toothpick clean.
This cake is really really good, it tastes amazing and makes the whole house smell wintery and cozy.
