This salad is one of my favorites. Pomelo and pomegranate season are almost the same and once they hit the market, I start making this salad. It is so refreshing, creamy yet light and absolutely delicious!
The dressing is made with such simple ingredients you won’t believe it’s that good. You can make this for most lettuce based salads.. add what you like and leave out what you don’t. You can even spice it up a little and throw in some Mexican flavors with some red beans and bell peppers for a different salad altogether. It is so versatile.
For the pomelo, it must be segmented and peeled well. The skin is bitter and mostly not edible. If you have grapefruit on hand they are good in this salad too. Choose the red ones to add color. They too have to be segmented and peeled.
There is not much to say really so I’m just going to start with the recipe.
Ingredients:
- 2-3 cups iceberg lettuce
- 1 pomelo segmented, deseeded, and peeled
- ½ cup pomegranates
- 1 cup sliced mushrooms
Dressing:
- 3 tbspn yoghurt
- 2 tbspn mayonnaise
- 2 tbspn lemon juice
- 2 tbspn olive oil
- 1 crushed garlic clove
- Salt & pepper
*First peel the pomelo segments and set aside. I usually try to keep them whole only because they look nice. You don’t have to do that, sometimes it’s a challenge.
*Next deseed the pomegranate. Set aside.
*Slice the mushrooms. Set aside.
*Make the dressing. It is super simple and straight forward. In a bowl, whisk together the yoghurt and mayonnaise. I prefer more yoghurt than mayo, but feel free to use equal parts if you like. Add the crushed garlic, lemon juice, olive oil, sat and pepper and whisk again. Set aside. Don’t worry that the garlic won’t work with the pomelo and pomegranate since they are fruits. It works really well actually you won’t even feel it’s there.
I have to say that this dressing is really good and works as a base dressing for many salads.
*Now we assemble. In a large salad bowl, lay a bed of largely cut lettuce. Arrange the pomelo segments, mushroom slices and scatter the pomegranate beads.
*Right before serving, pour the dressing on the salad and serve. Keep some dressing aside for those who want more.
