Jalapeno pickles are one of those things you add on everything.. egg sandwich, jalapeno pickles.. falafel, jalapeno pickles.. nachos, jalapeno pickles .. cheese sandwich, jalapeno pickles and the list goes on :) in our house at least and I'm sure it is so in many of yours. And if it isn't maybe it's time you try them and join the club :)
Here in Jordan it is difficult to find Jalapenos most of the time, therefore I tried these with a variety of other green peppers and it's safe to say, it works well with the kind you have available. The only rule and it's an important one, the peppers MUST be fresh.
This recipe is so easy, it gets together in no time and requires no sophisticated ingredients, so let's go ahead and start.
Ingredients:
- Green peppers of choice (Jalapeno is ideal) - فلفل اخضر حار
- For every cup of water you will require: كل كوب من الماء يحتاج :
- 1 cup vinegar - كوب خل ابيض
- 2 tablespoons sugar - 2 ملعقه طعام سكر
- 1 tablespoon sea salt - 1 ملعقة طعام ملح خشن
- 1 tablespoon black pepper corns - 1 ملعقة طعام فلفل اسود حب
- 1 teaspoon mustard seeds - 1 ملعقة صغيره حبوب الخردل
- 2 cloves garlic - 2 ضرس ثوم
*Slice you peppers into medium sized slices, not too thick, not too thin and drop them into a jar.
*Give the whole garlic cloves a small press to slightly crack them helping them release their flavor into the liquid, and also drop them over the peppers.
*On the side make the brining liquid by dissolving the sugar and salt in the water and vinegar and finish it off with the pepper corns and mustard seeds. If you can't find mustard seeds, it is fine, carry on without them.
*Once dissolved pour the liquid over the peppers, make sure to cover them completely. If you need more liquid make another batch.
*Close the jar tightly and leave them for a few days until they turn into pickles. Once you open the jar and start using these delicious slices you must store the jar in the fridge to stop them from softening too quickly.
