١ كوب عدس برتقال
١ لتر ماء درجة حرارة الغرفة
١ بصلة متوسطة مفرومة
١-٢ جزر مفروم
ملح
١ ملعقة صغيرة كمون مطحون

للتزيين

خبز محمص
بقدونس مفروم
عصير ليمون (اختياري)

Lentil soup is one of the most famous soups in the Middle East. A cold day shall not pass without the comfort of a hot bowl of lentil soup! It just isn't right. Squeeze a generous amount of lemon juice and top it with some crunchy toasted bread and  a sprinkle of parsley and you have yourself the perfect cold day comfort food, and with the simplest ingredients.

For this soup we use orange lentils. Simply because they have the quality of turning into mush when cooked which results in a perfectly creamy soup. Some people add a potato to the cooking process to make it even creamier but i prefer adding carrots. They add flavor, color and nutritional value to the end soup. You of course can add whatever you like. Lentil soup with pumpkin or mushrooms are particularly delicious options. Love! 

Orange lentils require no soaking and cook in a short time. They are also protein packed and high in fiber and value.  So the next time you crave soup, lentils are the answer. 

Ingredients: 

  • 1 cup orange lentils
  • 1 liter room temp water
  • 1 medium onion chopped
  • 1-2 carrots chopped
  • Salt
  • 1 teaspoon ground cumin
  • For garnish: 
  • Toasted bread
  • Chopped parsley
  • Lemon juice (optional)

*In a steel pan, saute the onions until lightly golden.

*Throw in the carrot, give it a stir. This is where you add your potato or pumpkin or mushrooms if you want. 

*Add in the washed and drained lentils, and pour the water on top. Use room temp water and not hot. 

*Season with salt and cumin and give it a boil.

*Lower the heat to a gentle simmer and leave it to cook for around 30 minutes. Give it a stir every now and then. 

*After 30 minutes you will find that it has thickened and turned into mush. Use your hand blender to blend it into a smoother consistency. This step is optional, you can skip it if you like. I just feel it is creamier this way. 

*That's it actually, you soup is ready. Plate it, garnish with toasted bread, a squeeze of lemon juice and sprinkle on some parsley.
