Pickled onions are an instant way to elevate any salad or a simple sandwich. They pack so much flavor and bring acidity and sweetness to dishes that lack so. You won't believe how easy they are to make and you can start enjoying them in a couple of hours after making them, no need for the long pickling wait.
Ingredients:
- 2-3 red onions
- 1 cup water
- 1/4 cup white vinegar
- 1/4 cup apple cider vinegar
- 1-2 tablespoons sugar
- 2 teaspoons sea / rock salt
- 1 tablespoon black pepper corns
- 1 rosemary sprig
*Cut your onions into 2 mm thick slices, don't make them too thin they will soften faster.
*Drop them in a clean glass jar and make the brine.
*Mix all the brine ingredients together until the salt and sugar are completely dissolved.
*Pour the brine on the sliced onions, add the rosemary sprig and close the jar.
*Leave for a couple of hours for the flavors to penetrate and you can enjoy on your favorite sandwich.
