Noodles are a huge trend right now, mainly because they are easy to prepare, very versatile and super flavorful. People are always on the go and are looking for something fast but good. This Thai noodle recipe is packed with Asian flavors, the peanut butter, the sweetness, the slightly acidic and the spicy you can't go wrong. And oh yes, let's not forget, it comes together in under 15 minutes. That is to say if your knife is sharp and you can chop your veggies fast. If not though it will still take you less than 20 minutes to put a large bowl of delicious spicy peanut butter noodles full of healthy veggies on your table.
You will need rice noodles for this, but if you don't have any no worries, pasta will be just fine.
What type of vegetables to use solely depends on what you like, I put my favorites but feel free to add or take out as you like. This recipe even works great for noodles only without any additions but you know me, I love my veggies.

Ingredients:

  • 200 g noodles
  • 1 cup thinly sliced red cabbage
  • 1 cup thinly sliced white cabbage
  • 1 cup thinly sliced carrots
  • 1 cup thinly sliced bell peppers
  • 1 cup chopped brocolli
  • 1 cup bean sprouts
  • 1/4 cup coriander
For the sauce:
  • 1/2 cup peanut butter
  • 4-5 tablespoons soy sauce
  • 2 tablespoons maple syrup/ honey
  • 3 tablespoons rice vinegar
  • 2 crushed garlic
  • 2 teaspoon grated ginger
  • 1 teaspoon sesame oil
  • 1-2 teaspoons sriracha (optional)
  • 1/4- 1/2 cup water
For garnish:
  • Sesame seeds
  • Green onion
  • Chili flakes or slices

*Start by thinly slicing all your veggies. For the broccoli, remove all the stem and divide the broccoli into small florets. You can chop them if you like too, everything goes.
*Once your vegetables are ready, cook your noodles according to the package. For the rice noodles, most packages require a 5 minute boil.
*While the noodles are cooking, make the sauce. In a small sauce pan, dump in all the ingredients together. You just want them to slightly heat in order for the peanut butter to melt and blend with the other ingredients. This will also give the garlic and ginger the chance to release their flavors. It will only take a couple of minutes.
*Once the noodles are ready, drain them and place them in your serving dish. While still hot add the sliced vegetables and pour on the sauce. This must happen while the noodles are hot, this way the sauce will equally coat them and everything is fully incorporated.
*Garnish with some sesame seeds, sliced green onions and chilies and maybe a sprinkle of chili flakes. Enjoy!
