Pancakes are a staple in every house, but this pancake recipe is one of the fluffiest you’ll ever have. It is made with simple ingredients, but a few tweaks can make the world of a difference. You get thick fat fluffy pancakes every time.
To make the pancakes fluffy you need to sift the dry ingredients, this lets in more air and results in lighter pancakes.
Usually in pancakes every cup of flour requires a teaspoon of baking powder. Today for two cups of flour I added 3 teaspoons of baking powder. Baking powder is the rising agent and adding 3 teaspoons is responsible for the extra thickness and the air holes in the pancakes. Also when adding the right amount of liquid you end up with the perfectly thick pancakes. Some people prefer their pancakes on the thinner side, no problem, just add a tiny bit more milk. Be careful not to go overboard, you don’t want to end up with crepes instead of pancakes.
Ingredients:
- 2 cups flour
- 3 teaspoons baking powder
- 4 tablespoons sugar
- Pinch of salt
- ½ cup vegetable oil/ melted butter
- 2 eggs (room temp)
- 1 ½ cups warm milk
- Vanilla
*Start by sifting the dry ingredients together, flour, baking powder, salt and sugar. Set aside.
*In a different bowl whisk in the eggs, milk, oil, and vanilla.
*Pour the wet ingredients over the dry and lightly mix. Do not over mix! You do not want to work the gluten. A few lumps are ok.
*If you don’t have a pancake pan, use a nonstick pan. Must be nonstick. A good pan will give you good pancakes from the first try.
*Heat the pan over medium heat. Once it’s nice and hot pour in a ladleful of batter. No need for any butter, if the pan is hot enough and nonstick nothing will stick to it. If this is your first try and it keeps sticking, use a nob of butter to help grease the pan.
*After pouring the batter on the hot pan, we wait for the bubbles to form and the side to get some color. This doesn’t take long at all so never leave its’ side. With a good flipper flip the pancake on the other side and wait for it to get some color. If the pancake is not cooked enough before you flip it the batter will splatter all over. Make sure it is almost cooked so it will hold its’ shape when flipped.
*Stack the pancakes on top of each other, add some butter and drizzle the maple syrup on top. Oooh that is so satisfying and absolutely delicious. The best homemade pancakes that will turn out successful every time. Best part is, they are super easy and they are done in no time!
