This Egg wrap went viral on social media platforms. In my opinion this happened simply because it is so simple that anybody can do it and the fact that it is so versatile. Make the egg-tortilla base and fill it with what you like! The options are endless. Just make sure you don’t over fill it like I did, it will be harder to close 😊 The purpose is to roll it like a sushi roll, except in my case I had to settle for simply folding the sides over and barely being able to close it! It was such a big wrap but extremely good and full of flavors.

Part of the huge flavor profile came from the caramelized onions I prepared earlier. Caramelizing onions is so simple but requires some patience because you cannot make it happen on high heat. It has to be done on low heat over a longer period of time. This allows the natural sugars in the onions to caramelize making the result intensely flavorful. I know what you’re about to say, who has the time? I assure you it is totally worth it. Still, if you are not willing to wait, use thin raw red onion slices instead. They do not taste the same but they are really good.  

It basically starts in a non stick pan, if you don’t have one get one. It must be nonstick to allow the eggs to come out easily and fully.

Ingredients:

  • 2-3 eggs
  • 1 tortilla
  • 2 turkey slices
  • Mozzarella
  • Caramelized onions (made with 2 medium onions)
  • Cheddar cheese
  • Spinach
  • ½ an avocado

 

*Start by caramelizing your onions. Simply slice them thinly and add them to some olive oil in a non stick pan with a sprinkle of salt and pepper on low heat until they release all their natural sugars and get caramelized. Do not be tempted to increase the heat, those would be fried onions and not caramelized. Onions shrink when they cook that's why i used two onions. 

*Wash and dry the spinach, slice the avocado, and beat the eggs in a bowl.

*Now you begin. Melt some butter in your nonstick pan and pour in the beaten eggs.

*Before the eggs are cooked place the tortilla over in order to stick to them, if the eggs get cooked the tortilla won’t stick.

*Once the eggs are cooked gently flip over so the tortilla is now facing down.

*Now add the fillings you like. I used turkey slices then some Mozzarella cheese, the caramelized onions we prepared earlier (if you skipped making these,  you can simply add red onion slices or no onions at all), cheddar cheese, the spinach and sliced avocado. Of course adding all these made my wrap super chunky and difficult to wrap so I folded it instead.  So maybe add less of each ingredient if you want it to roll. If you’re like me and more is more 😉 go ahead and get all the good stuff in there, who cares if it doesn’t roll.

*That’s it really , once you roll or wrap or overlap your sandwich you are ready to eat. Enjoy!
