Broccoli is a widely under rated vegetable. While many people dread having it on their dish and others love it steamed... many forget the fact that you can have it raw in a salad. Yes raw! Sounds crazy right? Not really. All you need to do is cut it small enough to fit in one bite and for it to be fully coated with the sauce. The sauce that is so good you can put it on paper and still make it taste good! It is so refreshing and bright yet creamy and luscious. Giving you the feel of a very high end dressing when in fact it was made with ingredients we all have in our fridge. Best part is, it is yoghurt based. For those who love mayo, you can add an optional tablespoon, although in my opinion i don't feel you need it.
I've put together this salad with a rainbow of vegetables that I feel work best together with this dressing. Feel free to play around and experiment new things if you like but give it a try first with my bunch I'm sure you won't want to change much.
Ingredients:
1 medium broccoli head
1/2 - 1 cup thinly sliced red cabbage
1/2 green apple, grated
1 cup sliced cherry tomatoes
2 tablespoons dried cranberries
1 1/2 tablespoons feta cheese
1 tablespoon sunflower seeds
1 tablespoon pumpkin seeds
1 teaspoon chia seeds (optional)
1 teaspoon flax seeds (optional)
Dressing:
1/2 cup yoghurt
1 tablespoon mayonnaise (optional)
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
2 tablespoons lemon juice
2-3 tablespoons honey
2 tablespoons olive oil
1 crushed garlic
Salt, black pepper
*Chop the broccoli into small florets bite size. It looks cuter and it is easier to fit broccoli and other salad ingredients on your fork.
*Thinly slice the red cabbage, grate the green apple and twist a few drops of lemon on them to prevent them from going brown.
*Make the dressing by whisking all the ingredients together, no blender needed.
*Now assemble the salad. Add all the ingredients, crumble the feta and sprinkle on the seeds. All seeds are optional, but I ask of you to try them first. Not only are they packed with nutrients but they add so much flavor, especially the sunflower and pumpkin seeds. 
*Drizzle on the dressing, give everything a good mix and enjoy. If you have any dressing left over, keep it in a jar in the fridge. It keeps for up to 3 days.
